Le Sake a jou\u00e9, et joue toujours un r\u00f4le central dans la vie et la culture des japonais. Le Sake est profond\u00e9ment li\u00e9 aux habitudes alimentaires du Japonais. Conna\u00eetre le Sake c&rsquo;est aussi conna\u00eetre l&rsquo;histoire, la culture, la soci\u00e9t\u00e9 et l&rsquo;environnement du Japon d&rsquo;aujourd&rsquo;hui. (Sake s&rsquo;\u00e9crit sans accent sur le \u00ab\u00a0e\u00a0\u00bb et sans \u00ab\u00a0s\u00a0\u00bb au pluriel) <\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\">Le Sake est une liqueur dont les principales mati\u00e8res premi\u00e8res sont le Riz, le Koji de riz et l&rsquo;Eau, brass\u00e9e \u00e0 l&rsquo;aide de micro-organisme appel\u00e9e Koji-kin et de levure. Il titre entre 13 et 16 degr\u00e9s. Les riz japonais entrent sous deux grandes cat\u00e9gories  : riz de table et riz exclusivement de brasserie. Les riz de brasserie utilis\u00e9s pour le Sake sont \u00e0 gros grain tendre de faible teneur prot\u00e9inique. Leur culture, plus \u00e9labor\u00e9e que celle des riz de table, les rend aussi plus chers.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\">Le Koji est un produit obtenu en appliquant le Koji-kin dans le riz cuit \u00e0 la vapeur, et une mati\u00e8re premi\u00e8re importante et commune des Sake japonais traditionnels. La qualit\u00e9 des eaux est tout aussi importante. La puret\u00e9 des eaux riches des apports de chaque terroir signe les caract\u00e9ristiques des grands Sake. Produit de fermentation tout comme le vin et la bi\u00e8re, le processus pour obtenir le Sake est cependant plus complexe.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\">Le vin fermente naturellement par ajout de levures au jus du raison press\u00e9. Dans le cas du Sake en revanche, le seul apport de levure ne d\u00e9clenche par la fermentation. Lorsque le riz contient des sucres simples, d\u00e9marre le processus de fermentation. Il peut en effet se d\u00e9guster chaud, frapp\u00e9, ou tout simplement \u00e0 temp\u00e9rature ambiante. C&rsquo;est dire combien sa temp\u00e9rature de consommation, compar\u00e9e aux autres breuvages alcoolis\u00e9es, est d&rsquo;une amplitude tr\u00e8s large : de 5\u00b0C \u00e0 55\u00b0C environ.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\">Il existe 4 diff\u00e9rentes cat\u00e9gories de Sake : les Sake au bouquet prononc\u00e9, les Sake de type l\u00e9ger et moelleux, les Sake riches et enfin les Sake d&rsquo;\u00e2ge. Ces divers types de Sake apportent chacun leur dose de plaisirs multiples et diversifi\u00e9s.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\">Le Sake se consomme aussi bien dans un verre que dans un r\u00e9cipient fait d&rsquo;une mati\u00e8re plus traditionnelle (terre cuite, porcelaine ou laque). Ici encore, le <a href=\"https:\/\/japansake.or.jp\/sake\/en\/basic\/how-to-serve-sake\/cups-vessels\/\" target=\"_blank\" rel=\"noreferrer noopener\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#8d9a83\" class=\"has-inline-color\">choix de la forme du r\u00e9cipient<\/mark><\/a>, de sa mati\u00e8re, et celui de la temp\u00e9rature de d\u00e9gustation, permettent de finement d\u00e9cliner les infinies variations d&rsquo;ar\u00f4mes du Sake.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\">Le Sake \u00e9tant diversifi\u00e9 aussi bien au niveau de ses bouquets que de ses modes de d\u00e9gustation. Il r\u00e9alise  de beaux mariages avec la grande vari\u00e9t\u00e9 de la cuisine japonaise et fran\u00e7aise et des 4 saisons. Il constitue \u00e9galement une excellente base pour les cocktails.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\">Quelque soit les mets et leur style, le Sake se marie parfaitement avec les cuisine du monde entier : c&rsquo;est la raison pour laquelle il figure sur la carte des vins des meilleurs restaurants fran\u00e7ais, italiens ou d&rsquo;autres pays occidentaux.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\">Le Sake ennoblit incontestablement la saveur des mets, tout en apportant un b\u00e9mol aux accents un peu trop prononc\u00e9s du boeuf ou des fruits de mer. Il se reconna\u00eet par son bouquet fruit\u00e9, voire \u00e9vocateur de fragrances florales, avec un limpide accent de fra\u00eecheur au palais. Lorsque le polissage du riz atteint une proportion (seimai-buai) de 50% ou moins du grain entier, on parlera de <strong><mark style=\"background-color:rgba(0, 0, 0, 0);color:#7d4e2d\" class=\"has-inline-color\">Daiginj\u014d-shu \u5927\u541f\u91b8\u9152<\/mark><\/strong>.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\"><strong><span style=\"text-decoration: underline;\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#7d4e2d\" class=\"has-inline-color\">Junmai-shu \u7d14\u7c73\u9152<\/mark><\/span><\/strong> : Sake \u00e9labor\u00e9 uniquement \u00e0 partir de riz blanc, de Koji de riz et d&rsquo;eau. Il se caract\u00e9rise par un bouquet moelleux et une saveur riche et suave au palais.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\"><strong><span style=\"text-decoration: underline;\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#7d4e2d\" class=\"has-inline-color\">Honj\u014dz\u014d-shu \u672c\u91b8\u9020\u9152<\/mark><\/span><\/strong> : Sake \u00e9labor\u00e9 \u00e0 partir de riz poli jusqu&rsquo;\u00e0 70% ou moins du grain entier, de Koji de riz, d&rsquo;alcool de brassage et d&rsquo;eau. Il se reconna\u00eet \u00e0 son bouquet paisible et discret et son contact franc et frais au palais. Tout ce qui n&rsquo;entre pas dans cette classification porte l&rsquo;appellation de Futsushu, ou Sake ordinaires, aux saveurs aussi vari\u00e9es que les marques qui les produisent, et qui font l&rsquo;objet d&rsquo;une tr\u00e8s large consommation dans tout le Japon.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\"><strong><mark style=\"background-color:rgba(0, 0, 0, 0);color:#7d4e2d\" class=\"has-inline-color\">Il existe en outre maintes vari\u00e9t\u00e9s de Sake d\u00e9finies par leurs m\u00e9thodes particuli\u00e8res de fabrication<\/mark><\/strong><\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\"><strong><span style=\"text-decoration: underline;\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#7d4e2d\" class=\"has-inline-color\">Nama-zake \u751f\u9152<\/mark><\/span><\/strong> : Sake produit par simple pressurage du mo\u00fbt et non pasteuris\u00e9. Il laisse au palais une note fra\u00eeche et l\u00e9g\u00e8re.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\"><strong><span style=\"text-decoration: underline;\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#7d4e2d\" class=\"has-inline-color\">Gen-shu \u539f\u9152<\/mark><\/span><\/strong> : Sake avec un taux d&rsquo;alcool plus \u00e9lev\u00e9 car sans addition d&rsquo;eau au produit de pressurage du mo\u00fbt. Ses 17\u00b0C &#8211; 20\u00b0C lui conf\u00e8rent une mise en bouche aux r\u00e9sonances riches et profondes.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color\" style=\"font-size:17px\"><strong><span style=\"text-decoration: underline;\"><mark style=\"background-color:rgba(0, 0, 0, 0);color:#7d4e2d\" class=\"has-inline-color\">Ko-shu \u53e4\u9152<\/mark><\/span><\/strong> : Sake vieilli pendant deux ou trois ans, voire cinq ans ou plus.
